주방과 식음료 영업장의 위생과 청소 관리, 식기세척 관리, 그리고 대규모 연회장의 행사 관련 Stewarding 업무, 아웃소싱 교육 및 기타 업무를 담당합니다.

[Position] Stewarding Supervisor (3년 이상)

Position Summary:

The Stewarding Supervisor is responsible for supervising the daily operations and ensuring the cleanliness and organization of the kitchen and food service areas.  This position assists the Stewarding Manager or Assistant Manager in overseeing the stewarding team, coordinating dishwashing operations, and maintaining sanitation standards to support smooth food and beverage service.

Stewarding Supervisor oversees and directs all aspects of the resort outlet stewarding operation under the general guidance and supervision of the Stewarding Manager within the established policies and procedures.  He/she directs the efforts and activities in the stewarding section to ensure quality standards of cleanliness, hygiene, and sanitation of resort outlet areas, equipment, and utensils are always maintained, leading to guest satisfaction, and employee satisfaction.

Primary Duties and Responsibilities:

• Team Supervision: Supervise and coordinate the activities of the stewarding team, including dishwashers, cleaners, and other support staff. Assign duties, provide guidance, and ensure efficient workflow to meet operational needs.

• Sanitation and Cleanliness: Monitor and enforce strict sanitation practices and cleanliness standards in the kitchen and food service areas. Ensure compliance with health and safety regulations, including proper handling and storage of food, cleaning chemicals, and waste disposal.

• Equipment and Inventory Management: Oversee the proper use, cleaning, and maintenance of stewarding equipment, such as dishwashing machines, cleaning tools, and storage areas. Conduct regular inspections, report maintenance issues, and coordinate repairs to minimize equipment downtime. Assist in inventory management by monitoring stock levels of cleaning supplies and other related items.

• Training and Development: Train stewarding staff on cleaning techniques, safety procedures, and equipment operation. Provide ongoing coaching and support to enhance their skills and performance. Conduct regular performance evaluations and offer constructive feedback for improvement.

• Quality Control: Conduct inspections to ensure dishes, utensils, and equipment are cleaned and maintained to the highest standards. Monitor cleaning procedures and verify adherence to established guidelines. Take corrective actions to address any deficiencies or non-compliance issues.

• Collaboration and Communication: Foster effective communication and collaboration between stewarding staff, kitchen teams, and other departments. Coordinate with chefs, banquet managers, and service staff to ensure efficient operation and timely supply of clean and sanitized items.

• Operational Support: Assist in organizing and coordinating the flow of dishwashing operations, ensuring smooth transitions and timely supply of clean items for food service. Help troubleshoot operational issues and address them promptly to minimize disruptions.

• Safety and Compliance: Ensure compliance with local health and safety regulations, food handling guidelines, and sanitation standards. Follow proper procedures for reporting incidents, accidents, or potential hazards. Maintain documentation, records, and reports required for inspections and audits.

Minimum Education and Qualifications:

• Minimum 3 years previous experience in a high volume, complex casino/hotel (Integrated Resort) environment or a recognized five-star luxury hotel.
• Previous experience in stewarding or a related field, with demonstrated supervisory experience.
• Solid knowledge of sanitation standards and cleaning practices in a food service environment.
• Strong organizational and leadership skills, with the ability to prioritize tasks and manage a team effectively.
• Effective communication and interpersonal abilities to train, motivate, and supervise stewarding staff.
• Attention to detail and a commitment to maintaining high standards of cleanliness and hygiene.
• Familiarity with inventory management principles and experience in controlling costs.
• Understanding of health and safety regulations and compliance requirements.
• Flexibility to work shifts, including evenings, weekends, and holidays as required.
• Must possess a high level of maturity to deal with the most demanding guest requests and requirements.

Physical Demands and Work Environment:

• Must be able to walk or stand for extended periods of time.
• Must be able to work flexible hours including weekends, holidays, and late nights.
• Ability to work on your feet for eight hours or more.
• Must be willing to travel locally and regionally to conduct business, and occasional travel within Korea. (해외 여행의 결격 사유가 없는 자)
